During the week I always make a list of the sinful pleasure I will enjoy on Saturday. Of course, when Saturday arrives I don't have enough time in the day to enjoy ALL of my favorites.So I normally end of narrowing it down to one or two.
Since I am still exhausted from celebrating a friends birthday last night I did not want to put a lot of time into baking. Truthfully, I did not want to bake at all. However, I wanted to enjoy some time with my three favorite little people. Hummmmm....I had to think of something that was quick and easy...and then I remembered this Cake Mix Cookie recipe by my kitchen savior (Monique) from Yes, Divas Can Cook!
To be honest, I was a little leery of eating cookies made from cake mix. It just seems wrong! But what the hey, the recipe had everything I was asking for....quick, easy, sweet, and kid friendly.
I actually burned the second batch because I was distracted by my 1 year old, and of course my kiddos still loved them!
Ingredients
1 box of cake mix (any flavor)
1/3 c. vegetable oil
2 eggs
1 cup of add-ins (candy, morsels, nuts, etc.) *optional*
Again, please ignore the date on these pics, these were taken today. I really need to just remove the date.
Preheat oven to 350
Combine all ingredients
Add optional "add-in"if you are using...
My daughter decided to use pink sprinkles from Valentines day,
it turned our Lemon mix batter orange
Mix until combined...
Place spoonfuls of batter on an non-greased cookie sheet...
(I don't own a nice cookie sheet so I just used foil, coated lightly with cooking spray)
Place into oven and bake for 8-10 minutes.
Remove from the oven and let cool.
ENJOY!!

We love to make Cake Mix Cookies. We use a stick of butter instead of oil. The lemon ones are the BEST!
