Egg White Omelet with Broccoli and Turkey Sausage

Ok, so I was going to post a video recipe about how to make Spaghetti Squash (and I know some of you have been waiting). But I am having trouble with converting the file type (but I will get the darn thing to do as I command!!). So this week try this delicious egg white, broccoli, and turkey omelet recipe instead!


Things you will need:
9 inch skillets
spatula
fork or a whisk (to beat eggs)
small mixing bowl

Ingredients:
3 egg whites
1 whole egg
1/2 cup of finely chopped broccoli (boil first if frozen)
 2oz of lean turkey sausage
1 slice of fat free cheese
 non-stick spray


Combine egg whites, whole egg, and broccoli in a-small bowl. Beat with a fork or whisk until combined.

Cut turkey sausage into your desired size.

Spray 9 inch skillet with non-stick spray over medium high heat.

Pour the egg and broccoli mixture into the skillet. Do not move the skillet or move the egg and broccoli mixture. This will allow the eggs to set on the bottom (will only take a few seconds).

As eggs cook, take a spatula and push the edges of the egg and broccoli mixture toward the center. This will allow the uncooked eggs on top to flow underneath and make direct contact with the skillet. Repeat the procedure at various spots around the edge of the setting egg mixture.

When the egg mixture still looks shiny, place turkey sausage and fat free cheese on top. If your egg mixture looks cooked, than it is over cooked!

Fold the the omelet in half and slide onto a plate, serve with fruit of choice and enjoy!
